Abstract:The Volatile components in 9 samples of Fuzhuan tea produced in 1975, 1985, 1991, 1994, 1996, 1999, 2004, 2009 and 2012 were extracted by simultaneous distillation extraction (SDE) and analyzed by gas chromatography-mass spectrometry(GC–MS). The results showed that total volatile components identified were 105. There were 93, 91, 88, 78, 77, 72, 88, 87 and 83 components, including 62 same components, in the 9 samples of 1975, 1985, 1991, 1994, 1996, 1999, 2004, 2009 and 2012, resectively.The number and content of the compounds in the sample of 1975 were the highest(93 and 62.202%). Acids, aldehydes and ketones were the dominant volatile substances in Fuzhuan tea. Palmitic acid, Nonanoic acid, Phytone, Diethyl phthalate and Hexanal were the main compounds in most samples. The samples could be classified into five groups, namely, 1975, 2012 took as one group separately, 1985 and 1991, 1996, 1999 and 1994, 2004 and 2009 took as the other three groups by principal component analysis of same components and cluster analysis of all volatile components.
